Ingredients:
- 1 cup sliced almonds
- 2 tablespoons all-purpose flour
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 oz semisweet chocolate for drizzling
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine the sliced almonds and all-purpose flour
In a saucepan over medium heat, melt the unsalted butter
Stir in the heavy cream, granulated sugar, vanilla extract, and salt
Cook and stir until the mixture is smooth and the sugar is dissolved
Remove the saucepan from heat and pour the butter mixture over the almond-flour mixture
Stir well to combine
Using a teaspoon, drop small portions of the batter onto the prepared baking sheet, leaving enough space between each as they will spread while baking
Flatten each portion of batter with the back of the spoon to form thin, round cookies
Bake in the preheated oven for about 6-8 minutes, or until the cookies are golden brown around the edges
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes until they firm up
While the cookies are cooling, melt the semisweet chocolate in a microwave or using a double boiler
Once the cookies have cooled slightly, drizzle the melted chocolate over them in a decorative pattern
Allow the chocolate to set and the cookies to cool completely before carefully removing them from the parchment paper
Serve and enjoy these delicious almond florentine cookies
