Ingredients:
- 1 cup barley
- 1 cup lentils
- 1 cup wild rice
- 1 cup split peas
- 1 onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups vegetable broth
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Rinse the barley, lentils, wild rice, and split peas under cold water
In a slow cooker, combine the rinsed grains and legumes with the chopped onion, carrots, celery, and garlic
Pour in the vegetable broth and add dried thyme, dried rosemary, salt, and pepper
Stir well to combine all ingredients
Cover and cook on low for 6-8 hours or until the grains and legumes are tender
Once cooked, taste and adjust seasoning if necessary
Serve hot, garnished with fresh parsley if desired
