Ingredients:
- 1 lb dried red beans, rinsed and soaked overnight
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 teaspoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 6 cups chicken broth
- 3 cups cooked rice, for serving
- Green onions, chopped, for garnish
Instructions:
Soak the red beans, add the smoked sausage, onion, bell pepper, celery, and garlic to a large pot
Add the smoked paprika, cayenne pepper, bay leaf, oregano, thyme, and salt and pepper
After adding the chicken broth, heat the mixture until it boils
Once the beans are soft, reduce the heat to low, cover, and simmer for two to three hours, stirring now and then
Add some chopped green onions as a garnish and serve over cooked rice
