Grilled Greek Salad

Grilled Greek Salad is a delightful and healthy dish that combines fresh vegetables, briny olives, and creamy feta cheese with a zesty homemade dressing. Optionally, you can add grilled chicken for some extra protein. Its a perfect choice for a light and satisfying meal.

Ingredients:

  • 2 cups of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/2 cup of Kalamata olives, pitted
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 4 cups of mixed greens
  • 4 grilled chicken breasts optional
  • 4 lemon wedges for garnish

Instructions:

Preheat your grill to medium-high heat

In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, Kalamata olives, and feta cheese

In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing

If using grilled chicken, season it with salt, pepper, and olive oil

Grill the chicken for about 6-8 minutes per side, or until cooked through

Toss the mixed greens with half of the dressing and divide them among four plates or bowls

Top the greens with the tomato mixture and grilled chicken if using

Drizzle the remaining dressing over the salads and garnish with lemon wedges

Serve your Grilled Greek Salad immediately and enjoy
