This vegan lentil shepherds pie is a hearty and comforting dish thats great for nights spent at home. Its a filling meal that the whole family will love, thanks to the protein-rich lentils and tasty vegetables.
Ingredients:
- 2 cups cooked lentils
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 3 cloves garlic, minced
- 1 cup frozen peas
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups mashed potatoes
- 2 tablespoons olive oil
Instructions:
Warm the oven up to 190C 375F
Warm up the olive oil in a big pan over medium-low heat
Put in the celery, carrots, onion, and garlic
For about 5 minutes, or until softened, saut
Put in tomato paste, thyme, rosemary, salt, and pepper after the lentils are cooked
Bring it to a boil again
Add the frozen peas and stir them in
Cook for two more minutes
Spread mashed potatoes on top of the lentil mixture that you put in a baking dish
On top of the mashed potatoes, use a fork to make a pretty pattern
Bake the mashed potatoes for 25 to 30 minutes, or until they are just beginning to turn golden
