Ingredients:
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup milk
- 1/4 cup unsalted butter, melted
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 cup fresh blueberries
- 1/2 cup powdered sugar for glaze
- 2 tbsp milk for glaze
- 1/2 tsp vanilla extract for glaze
Instructions:
Preheat your oven to 350F 175C and grease a donut pan
In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt
In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Gently fold in the fresh blueberries
Transfer the batter into a piping bag or a Ziploc bag with the corner snipped off
Pipe the batter into the prepared donut pan, filling each cavity about 2/3 full
Bake in the preheated oven for 10-12 minutes or until the donuts are lightly golden and a toothpick inserted comes out clean
While the donuts are baking, prepare the glaze
In a bowl, mix the powdered sugar, milk, and vanilla extract until smooth
Once the donuts have cooled slightly, dip each one into the glaze, allowing any excess to drip off
Place the glazed donuts on a wire rack to set
Serve the blueberry donuts as a delicious and healthy treat
