Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large ripe bananas, mashed
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg
In a separate large mixing bowl, cream together the softened butter and sugar until light and fluffy
Add the mashed bananas, eggs, and vanilla extract to the butter-sugar mixture
Beat until well combined
Gradually add the dry ingredient mixture to the wet ingredients, alternating with buttermilk, starting and ending with the dry ingredients
Mix until just combined
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely
While the cupcakes are cooling, prepare the cinnamon cream cheese frosting by beating 8 oz of softened cream cheese, 1/2 cup of softened butter, 2 cups of powdered sugar, and 1 tsp of ground cinnamon together until smooth and creamy
Once the cupcakes are completely cool, frost them with the cinnamon cream cheese frosting using a piping bag or a spatula
Decorate with additional banana slices or a sprinkle of cinnamon if desired
