Vegan Lemon Poppy Seed Cookies

These lemon poppy seed cookies are delicious and vegan. They taste like tangy lemons and have a little crunch from the poppy seeds. For a quick and easy baking session, these are great.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1/2 cup vegan butter, softened
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions:

Warm your oven up to 350F 175C and put parchment paper on a baking sheet

Mix the softened vegan butter, granulated sugar, and powdered sugar together in a mixing bowl until everything is well mixed

Combine the apple sauce that hasnt been sweetened, lemon juice, lemon zest, and vanilla extract

Mix until its smooth

Mix the all-purpose flour, baking powder, salt, and poppy seeds together in a different bowl using a whisk

Mix the dry ingredients into the wet ingredients one at a time until a soft dough forms

Using a spoon or cookie scoop, drop cookie dough by the spoonful onto the baking sheet that has been prepared

Leave about 2 inches between each drop

Put the cookies in an oven that has already been heated for 10 to 12 minutes, or until the edges are just beginning to turn golden

After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet

Then, move them to a wire rack to cool all the way down

After the cookies have cooled, you can eat them
