Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
Instructions:
In a bowl, whisk together the flour, baking powder, and salt
In a separate bowl, cream together the softened butter and granulated sugar until smooth and creamy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms
Divide the dough in half and shape each half into a disc
Wrap in plastic wrap and refrigerate for at least 1 hour
Preheat the oven to 350F 175C and line baking sheets with parchment paper
Roll out the chilled dough on a floured surface to about 1/4-inch thickness
Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden
Let the cookies cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely
Once cooled, you can decorate the cookies with icing or sprinkles if desired
