Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups old-fashioned rolled oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until smooth and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
In a separate bowl, whisk together the oats, all-purpose flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie
Gently flatten each cookie with a fork, making a criss-cross pattern on top
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
Once cooled, store the cookies in an airtight container
