Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 1/2 cup blackberries, mashed
- 1/4 cup coconut cream
- 2 tbsp cornstarch
- 2 tbsp maple syrup
- 1/2 tsp lemon zest
Instructions:
Warm the oven up to 175F 350C
Prepare a donut pan by greasing it
Whisk the flour, sugar, baking powder, baking soda, and salt together in a bowl
Applesauce, vegetable oil, vanilla extract, and almond milk should all be mixed together in a different bowl
Mix the wet and dry ingredients together, and then add the mashed blackberries
Put the batter into the donut pan that has been prepared
Bake for 12 to 15 minutes, or until the top is lightly golden
To make the custard, mix the coconut cream, cornstarch, maple syrup, and lemon zest in a saucepan with a whisk
Stir the food all the time over medium-low heat for about 5 minutes, or until it gets thick
After the donuts are baked, let them cool a bit before using a piping bag or spoon to fill each one with the blackberry custard
Enjoy while still warm
