Ingredients:
- 4 cups granulated sugar
- 1 cup corn syrup
- 1 cup water
- 4 envelopes unflavored gelatin about 3 tablespoons
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
- Powdered sugar for dusting
- Cooking spray for greasing
- Propane torch for torching
- Food coloring optional
Instructions:
Mix the gelatin and half of the water in a big mixing bowl
Give it ten minutes or so to bloom
Place the corn syrup, granulated sugar, and the remaining 1/2 cup of water in a heavy-bottomed saucepan
Stirring constantly, cook over medium-high heat until the sugar dissolves
Put a candy thermometer inside the saucepan and bring the sugar mixture to a boil without stirring until it reaches the soft ball stage, which is 240F 115C
Microwave the bloomed gelatin for about 30 seconds, or until it turns liquid, while the sugar syrup is heating up
Slowly incorporate the hot sugar syrup into the gelatin mixture using a stand mixer set on low speed
Because the syrup is very hot, proceed with caution
Once the mixture is thick, glossy, and has tripled in volume, turn the mixer up to high and beat it for ten to fifteen minutes
Mix in the salt and vanilla extract, beating for an additional two minutes to ensure everything is well combined
To achieve the desired color, add food coloring if desired, and mix until it is evenly distributed
Dust a 9 x 13-inch baking pan with powdered sugar after greasing it with cooking spray
Using a greased spatula, smooth the top of the marshmallow mixture after pouring it into the prepared pan
Allow the marshmallow to cure for at least four hours, or over night, at room temperature
After the marshmallow has set, cut it into the desired shapes with a knife or cookie cutters
To keep the cut marshmallows from sticking, dust them with powdered sugar
Gently burn the marshmallows surface with a propane torch until the desired level of toastiness is achieved
Use caution when handling the flame
Serve right away or save to make smores or other sweet treats
Savor your marshmallows that resemble burning clouds
