This Garlic Soba and Zucchini Noodles dish combines the nuttiness of soba noodles with the freshness of zucchini, all enhanced by the savory flavor of garlic and a hint of sesame. Its a quick and healthy meal option perfect for any day of the week.
Ingredients:
- 2 bundles soba noodles
- 2 medium zucchinis, spiralized
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions:
As directed on the package, cook the soba noodles
Once they are done, drain them and set them aside
Set olive oil on medium heat in a large pan
Add the minced garlic and cook until it smells good
Toss the spiralized zucchini noodles around a lot as you cook them for two to three minutes
Soy sauce, sesame oil, salt, and pepper should all be added to the pan with the cooked soba noodles
Toss everything together until its all well mixed and hot
Serve hot with sesame seeds on top
